This is a favorite roasted almond recipe from my mom, who likes to experiment in the kitchen.
Preheat oven to 250F.
Place almonds in a large mixing bowl.
Bring water to boil with salt in a 2 cup measuring cup – heat it in the microwave until it’s boiling (may take 1-2 minutes). Stir to make sure salt is dissolved. Pour boiling mixture over almonds. Stir to coat.
Lift almonds out of the bowl and onto a shallow pan. (I use a 12×16 rimmed baking sheet.)
Roast in the preheated oven, stirring every 20 minutes until roasted. This can take anywhere from 1 1/2 to 2 hours. Toward the end, taste to check the color and flavor of the nuts.
Store in an airtight container once cooled.
