An easy yet scrumptious marinara sauce that goes with any kind of pasta dish! This makes a lot. It freezes beautifully.
In a large saucepan over medium heat, saute onions until softened in a small amount of olive oil. Add garlic and saute 1 minute. Add in sugar, salt, basil, oregano, fennel (crush lightly with your hands before putting it in), thyme and pepper. Saute 2 minutes. Add tomatoes, vinegar, and chicken broth. Stir well. Cover and simmer over medium-low heat for one hour. Serve immediately or divide it into several plastic freezer bags to freeze for future use. Makes approximately 6 cups.
