Description

This veggie side dish makes a frequent appearance on our dinner table. It’s healthy, filling and very delicious!

Ingredients

  • 1  Large Head Of Cauliflower
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Grated Parmesan Cheese, Divided
  • Salt And Pepper, to taste

Preparation

Cut the cauliflower into florets and cook in boiling, salted water just until barely tender. Drain the cauliflower and return to the pot. Add the olive oil and stir to coat. Add one tablespoon of the grated cheese and stir. Place cauliflower in a baking dish and sprinkle the remaining tablespoon of cheese on top. Season to taste and roast in a 400ºF oven for 30 minutes.

This is wonderful! My husband said it was the best cauliflower he had ever eaten. I may have cooked it a little too long in the salted water, because it was really too soft after baking. It was so flavorful it was still excellent. Next time I will just barely blanch it in the boiling salted water before baking and see how that works. Thank you so much for the great recipe!
