This veggie side dish makes a frequent appearance on our dinner table. It’s healthy, filling and very delicious!
Cut the cauliflower into florets and cook in boiling, salted water just until barely tender. Drain the cauliflower and return to the pot. Add the olive oil and stir to coat. Add one tablespoon of the grated cheese and stir. Place cauliflower in a baking dish and sprinkle the remaining tablespoon of cheese on top. Season to taste and roast in a 400ºF oven for 30 minutes.
