This amazing appetizer can also be served alongside a salad for a light lunch or dinner – it’s perfect every time, flavorful, exotic, and EASY!
Marinate the chicken: Whisk together the mustard, honey, lemon juice, salt, oregano, and olive oil until smooth. Taste and add more salt if needed – the lemon juice, garlic, and oregano should be flavorful. Add the cubed chicken and smashed garlic cloves to the marinade, cover, and let it marinate in the refrigerator for 30 minutes or up to 3 hours if you have time.
For the Tzatziki sauce, mix yogurt, vinegar, sugar, minced garlic, onion, cucumber, and mint together. Taste and add a sprinkle of sugar or salt if needed – sauce should be tangy but not sharp from the yogurt. Set aside until ready to serve.
Heat a pan or griddle to medium-high heat and remove chicken from marinade. Grill the chicken for 5-8 minutes until browned and cooked through, stirring to brown all sides.
Serve chicken with fresh veggies, toothpicks, and Tzatziki sauce, for dipping.
Alternative: use the marinade overnight on large chicken breasts, cook chicken breasts according to your favorite method, then serve the chicken over white rice topped with Tzatziki sauce. Serve this with a green veggie on the side for a quick, healthy weeknight meal!
