Aren’t these impressive looking potatoes? Crispy on the outside, tender on the inside – perfection. They are super easy to make.
1. Preheat oven to 425 degrees F.
2. Wash potatoes well.
3. Lay each potato on a cutting board.
4. With a sharp knife, thinly slice each potato, being careful to NOT CUT all the way through. (TIP: I lay a chopstick on each side of the potato so I don’t accidentally cut too far.)
5. Season each potato. This is where you can get creative – slide a sliver of garlic between the layers, or experiment with different herbs, butter, whatever sounds good to you!.
6. Place potatoes in a baking dish that has been drizzled with olive oil.
7. Drizzle potatoes with olive oil.
8. Bake at 425 degrees for 40 minutes, or until the inside is tender.
9. Enjoy!

These rock! I put the potato between 2 cutting boards and used them as my stop so I wouldn’t cut all the way through – it worked great! Nothing like exposing more surface for garlic, herbs & spices! Nummy.

These are SO delish!
We didn’t do much different except baste with the oil from the bottom of the baking dish every once in a while, and at the very end we added some chives and parmesan cheese.
Ours did take about an hour, so a little longer. I loved the crispy crispy outside, with such soft middle!

These are great! I made them with meatloaf last night and we loved them. I used fresh minced garlic, rosemary, salt and pepper this time. It will be fun to play around with the seasonings.

These are really good! I made these for dinner this week, I rolled them in Kosher salt before baking….very yummy and easy…everyone was impressed!
