I was never a fan of Brussels spouts until I made these babies! But doesn’t bacon make everything better?
Preheat oven to 400ºF. Trim the hard, woody stems from the bottom of the Brussels sprouts and cut in half. This will help to cook the dense insides of the sprouts and make nice bite-sized pieces. Toss into an oven safe casserole dish. Using a knife, dice the bacon and onion. Add to the dish. Drizzle with olive oil, add salt and pepper to taste. Toss well and place in the oven. Cook for 30-40 minutes, until sprouts are tender and browned and bacon is crisp, stirring every 10 minuntes.

This is so good. We alwasy just fry ours in bacon grease after cutting the sprouts in 1/2 and throw in onion and the crumbled up bacon…so good…
