Well, I thought it was about time I actually posted something that included the words “low fat.” I’m constantly fussing about my weight but rarely doing anything about it. Pimento Cheese is one of my all-time favorite Southern foods and I thought with a little tweaking it could be part of a healthy snack. Serve on some celery or with one of my other healthier faves: boiled shrimp!
1. Blend all but the cheddar cheese until well mixed.
2. Stir in shredded cheese.

I can’t wait to try this!!! I LOVE LOVE LOVE pimento cheese, but have never thought of using cottage cheese as a partial mayo substitute! Awesome!
