I love making side dishes with grains (quinoa, couscous, barley, rice, etc.) and often just start adding ingredients I have on hand to jazz them up.
Saute garlic in a very small amount of olive oil. Place quinoa, broccoli, garlic and water in a sauce pan, cover, and bring to a boil. Season with a splash of soy sauce, cover, and reduce heat to low. Simmer until all liquid has been absorbed and quinoa has opened up (about 15 minutes).
Gently fold in pine nuts, green onions, garlic, cilantro, vinegar and olive oil. Season with salt and pepper to taste. Transfer to a serving bowl and serve immediately.
