YUM. Make these now. Your tummy and your loved ones will be singing their praises and then will do your laundry and clean the house because you are such a wonderful, clever person.
Preheat oven to 350ºF.
In a large bowl, mix the cream cheese, shredded cheese, egg, and corn.
Arrange the chips on a large rimmed baking sheet and fill each with approximately 1 teaspoon of the corn mixture. Top each with a slice of olive.
Bake until the filling sets, about 20 minutes.
Sprinkle the corn bites with chives and serve warm.
