I have made this sauce probably hundreds of times and it never fails to please! I have even allowed this to simmer and reduce further to make a very deep, rich dipping sauce. Easy to change up as well. I love adding roasted red peppers if I have them on hand.
Heat oil in a medium saucepan over medium-high heat. Saute onions until they just start to turn golden brown, about 3-5 minutes. Add garlic and sun-dried tomatoes. Saute another 2 minutes, until garlic is lightly toasted. Be sure not to burn the garlic as it will turn bitter.
Deglaze pan with wine. Simmer for 1-2 minutes, until wine reduces by half. Stir in tomatoes and tomato sauce. Reduce heat to medium-low. Stir in oregano and basil. Season with salt and pepper. Allow to simmer 10-15 minutes, to slightly reduce and thicken sauce.
