An easy and healthy recipe with crunch pieces of baked kale dusted on freshly popped popcorn.
Preheat oven to 250 degrees F. Rinse and cut kale into large pieces, ensuring that the stems and large ribs are removed. Place into a large bowl and drizzle just 1 tablespoon of olive oil over the kale. I don’t use as much olive oil on the kale that I’m adding to popcorn, or it becomes too oily to “dust” with. Add salt and a pinch of chili powder. Mix well with your hands, and place in the oven on a baking pan for 15 minutes. I used wax paper for easy clean up. Make popcorn by adding kernels to a large saucepan with the remaining tablespoon of olive oil. Use pot holders to shake the pan frequently until all popcorn is popped. Remove baked kale, grind the kale into small flakes with a mortar or with a spoon. When the kale is crispy, this should be easy to do. Sprinkle the kale on the popcorn and serve.
