Say “no” to fries from fast food chains! No deep-frying and no usage of yesterday’s oil – healthy and yummy nonetheless! And the recipe can be easily doubled!
Peel the potato. Slice into 1cm strips and place the strips in a pot. Fill with hot water and boil for 5 minutes. The strips will still be hard.
Meanwhile, preheat the oven to 220 degrees Celsius (425 F). Line a baking tray with aluminum paper and drizzle with olive oil. Place in the oven.
Drain the potatoes and return the potato strips back into the pot and stir constantly over low heat until the excess water has evaporated. This is very important to prevent the oil from splattering later on and injuring yourself. Place a lid on the pot and shake the pot – as vigorously as you want – to roughen the sides of the potato strips. Tumble the potatoes into the hot oil and stir to coat the potato in the oil.
Bake for 30 minutes to 45 minutes, turning the fries once during the course of baking. Drain on a kitchen paper and sprinkle with salt and pepper. Serve immediately.

Tackled these last night. They were AWESOME, and surprisingly easy. I was almost scared off by the boiling part, but it was easy enough, and worked well. By far the best oven fries ever made in my house; from scratch or from freezer bag (Oreida, etc). I added some seasoned salt and baked a bit longer to make them crunchy. Good stuff!

These are really good!! I sprinkled them with Garlic Powder and made them garlic fries! Yum yum yum

I made these tonight – very tasty! I would definitely recommend removing the skins – I didn’t, and they are not as yummy as on “fried” fries. I also cooked them for 30 minutes – next time I will probably only go 20. Make sure your strips are uniform in size.
