Jalapeno Peppers stuffed with lots of cheese and Italian bread crumbs. Very flavorful appetizer or side dish.
Wash and cut the peppers on one side, lengthwise. Remove the seeds and membrane.
Mix the cheese, bread crumbs and salt in a bowl. Hold a jalapeno over the bowl and stuff, stuff, stuff. You should have just enough cheese to fill them up.
Seal the pepper with 2 toothpicks on both ends. Grill over medium heat until the skin is charred, about 10 minutes.
An alternative is to wrap a piece of bacon or pancetta around each pepper for additional flavor.

These look awesome! I do something close to these – but I sprinkle a little coarse salt over the peppers cut side up and broil them undil they are just beginning to char. Then I stuff them, but leave them cut in half – I am going to have to try toothpicking them together! Putting a small piece of precooked bacon in between the slices before toothpicking them would be delicious, too! **Is toothpicking even a culinary term?? =)
