If you want to learn to love Brussels sprouts, this is the recipe for you.
Heat olive oil in a large skillet over medium heat. Add pancetta and saute until crisp. Remove pancetta and set aside. Add sliced Brussels sprouts to the same skillet and cook until slightly browned. Add garlic and cook for a couple more minutes. Add stock and simmer until stock reduces and Brussels sprouts are tender. Add the Pancetta to the sprouts, season with spices and add Balsamic vinegar. Serve.
