Sweet roasted almonds can be eaten by themselves or on top of your favorite salad.
1. Preheat oven to 350 degrees F. Cut a large sheet of wax paper and lay it out onto the counter for later. Spread almonds onto a cookie sheet and bake for 5 minutes or until fragrant and light brown. Watch carefully because nuts will burn fast. Then remove from the oven and allow the almonds to cool.
2. While cooling your almonds, combine sugar and salt in a small bowl. Set aside.
3. In a small saucepan, combine honey, water and oil. Bring to a boil over medium heat. Once you reach a boil, stir in the almonds and cook until the almonds have absorbed the liquid – about 5 minutes.
4. Then mix in the sugar mixture, remove from heat and immediately spread the almond mixture onto the wax paper. Allow to cool and break apart. Store in a airtight container.
