Best ever pickle – sweet and tart! They take 8 days to make from start to finish, but they’re well worth the time.
These pickles take 8 days from start to finish, but they’re well worth the time.
The recipe may be doubled to accommodate a large batch of cucumbers. Just be sure to have enough brine to cover whatever amount you have.
Wash whole cucumbers and put in a deep roasting pan or stock pot.
Pour boiling water over to cover for 4 mornings.
On the 5th day, drain cucumbers and slice 1″ thick.
Put spices in a cloth bag.
Bring brine/syrup ingredients to a boil and pour over slices.
Repeat for 2 days.
On 8th day, put pickles in prepared canning jars and pour boiling brine/syrup over to within ¼-½” of rim.
Seal.
No water bath is necessary.
