Tofu with tomatoes, mushrooms, and zucchini, and cheese on French bread. Great little starter. Vegetarian friendly.
Preheat oven to 350ºF degrees.
In a 12-cupcake pan, put 1 tablespoon of the tomato sauce in each cup, followed by the tofu. Sprinkle garlic powder and parsley, then layer on zucchini, tomato, mushrooms, and 1 more tablespoon of tomato sauce. Then sprinkle on shredded cheddar cheese.
Put in the oven for 15–20 minutes.
Toast 12 slices of French bread. On a plate, lay out all bread slices, and dish out each tofu portion onto the bread.
