Lots of people think guacamole is really easy to make—and it is. But it’s also really easy to screw up and the main way people do is by adding stuff that shouldn’t be in guacamole in the first place. A good guacamole will have only the freshest ingredients. The star of the show is the avocado. It is crucial for the avocado to be perfectly ripe. Contrast that with some piquant flavours and you’ve got yourself a winning dip.
Finely chop red onion, tomato, cucumber, jalapeno, and cilantro. Mince garlic and add to the bowl. Dice up the avocado and squeeze the juice of the lemon onto mixture. Season with salt and pepper and stir until creamy in texture.
I love serving these with blue corn tortilla chips or alongside nachos.

Please! Do NOT use a cucumber in guacamole! Cucumbers bring a watery feel to the guacamole and isn’t authentic.
