Should have taken the earlier suggestions about reducing the amount of oil more seriously… yikes! Ended up with a very thin PB (more like a sauce than spread I guess) yet the flavor was delicious. Used very lighted salted roasted peanuts, so I did take liberties to add a little more salt at the end – ended up dividing the base and doing half with the white chocolate and the other half with a combination of chocolate chips and butterscotch chips (2 to 1) Both were fantastic, although I think that I prefer the chocolate/butterscotch combo. Can see this being endlessly flexible in terms of nuts and other add-ins… thanks for the great recipe!

I had a couple jars of roasted salted peanuts to use up, so I doubled this receipe and used a bit less oil than it called for to make it thicker. It turned out fantastic – my coworkers and I are brainstorming new snacks we can use for dipping in this! Pretzels, raspberries, apples….it would probably be pretty good drizzled on top of ice cream as well!

I used this homemade white chocolate peanut butter as a substitute for White Chocolate Wonderful in a quick bread recipe because I couldn’t find it in the store, and it worked perfectly! It tastes pretty delicious too.

Made it this afternoon! Delicious and so easy to make. I used coconut oil instead of vegetable oil. My kids devoured it on top of whole wheat crackers. I’ll serve it w/apple slices for lunch tomorrow! So yummy! Thanks!

SpencerKate – it is recommended that nutbutters be refrigerated because the oils can go rancid… but I’ll be honest, I rarely put my nutbutters in the fridge! However, I also eat them everyday, so they go quickly. It you stick it in the fridge it will last a few months!

I just discovered White Chocolate Wonderful loast week and three days later I had to go get some more – and my kids didn’t even eat any LOL! Too bad I don’t have a food processor – I would love to try this and I’m betting a standard blender wouldn’t work. Sigh.
