In Basque, tapa is called pintxo, so I’m going to share a pintxo directly from the Basque country.
Put the oil, vinegar, and finely chopped onion and peppers in a jar. Add salt if you want to. Give it a good shake and there we go! We already have a good vinaigrette that can be used for different recipes.
Now take the slices of French bread and toast them. On the bread, lay a slice of smoked salmon, followed by a slice of hard boiled egg. On top, lay a whole cooked shrimp or prawn.
Carefully spoon some vinaigrette over the top. Try to spoon more veggies than oil so as not to make it too oily.
Very easy and really good. Enjoy!
