From scratch black beans that can be eaten alone, made into a soup or frozen for later use. These are sooo flavorful.
Sort beans, remove rocks and wash the beans. Place beans and water in a large pot. Bring to a boil, reduce heat, then cover and simmer 2-3 hours (until skins begin to split). Add cumin and minced garlic. Rub oregano between your hands and add. Slice or chunk jalapeno pepper and add it along with a couple of springs of fresh cilantro. Simmer another hour or until very tender. Remove cilantro sprigs before serving.
Serve as a side and/or use these instead or canned beans in your favorite recipes.
I measure 1 1/2 cups of the prepared beans and cover with liquid and freeze for later use. This equals a can when thawed.
I puree this mixture to make a terrific fat free soup.
