Back where I come from, the term “redneck” isn’t taken too lightly. Now honestly, I think it has everything to do with tone and nothing to do with stereotype. To me, an admirable quality of country folk is the ability to make something out of nothing. My mom and I used to make this … concoction, for a lack of a better word. I decided to up the ante and throw in a few more flavors. Hope y’all like it!
Dump all the ingredients into a food processor and begin blending. I have a Ninja, so there aren’t settings, just pulsing. The trick is not to over-blend the ingredients, because for some reason the chicken gets this grainy texture that is just not fun at all. So taste-test as you blend to get it to the right consistency. You should still feel a bit of a crunch from the nuts, but overall the texture should be creamy.
And honestly, that’s it. Serve it up however you want to! This would make a great appetizer on tortilla chips/melba toast or lunch spread on multi-grain bread. That rhymed.
If you want to be fancy-schmancy with your Redneck Dip, well then stick in a few sprigs of parsley (instant fanciness) or decorate it with nuts.
