Spinach and Crab Dip

Description

This always disappears fast. I use neufchatel (less fat, more protein!) but cream cheese is just as good. It’s creamy, crabby, and perfect for parties!

Ingredients

  • 8 ounces, weight Creamed Spinach
  • 8 ounces, weight Neufchâtel Or Cream Cheese, Softened
  • 1 Tablespoon Mayonnaise
  • 8 ounces, weight Lump Crab Meat
  • 5 ounces, weight Shredded Parmesan Cheese
  • ½ teaspoons Lemon Juice
  • ¼ teaspoons Coarse Ground Pepper
  • ¼ teaspoons Paprika
  • ¼ teaspoons Nutmeg

Preparation

Thaw packaged creamed spinach in microwave. If you get the heat and serve kind, basically just cook it as the directions say.

In a bowl, mix the cooked spinach and the neufchatel. Add mayo, crabmeat, half the parmesan, lemon juice, and spices. Pour into a greased baking pan, cover with the rest of the parmesan.

Bake at 350 degrees (F) for 15-20 minutes or until the top starts to get brown and bubbly. You could also eat it as-is, uncooked. And of course it can be made the night before.

Serve with tortilla chips, crackers, bagel chips, or whatever dip-to-mouth device suits your fancy!

*The amount of cheese is approximate, just use as much as you want. It would also be delicious with any other kind of shredded cheese. Next time I’m gonna try mozzarella or cheddar! Mmmmm.

This was fantastic. Took it to a friend’s house for Easter and it was one of the highlights of the day. Actually had a package of “fake crab” that I needed to find a use for and used that. No one knew the difference. The change from just regular frozen spinach to the creamed spinach was a real winner. I’ll be sure to keep this in the front of my recipe list for future get togethers.
