A hint of nutty spice gives carrots a new twist.
Preheat oven to 450F.
Melt butter. While butter is melting and oven is heating, peel carrots and slice into 1/4 inch diagonals. Coins should work, too.
Combine everything but carrots in a bowl and mix well. Add carrots to the bowl, toss well to coat. Spread evenly on a tinfoil-lined baking sheet.
Cook in the oven for 10 minutes, stirring carrots around on the baking sheet. Continue cooking until fork tender. Generally, 15 minutes of total cooking time is plenty.
