My great-grandmother, Mammy, made these cheese wafers for us and they are a family tradition. If you have the thing-y that makes straws, you can make these into cheese straws. Served best with Bloody Mary’s.
Grate cheese and cream it together with the softened butter.
Add flour, salt and pepper and mix until the dough comes together. Divide dough in two and roll out (into long skinny tubes). Wrap each in plastic wrap and put the rolls in the ice box (a.k.a. fridge) for about half an hour. Then remove the rolls from the fridge onto your work surface. Slice into thin slices. Or you can roll in small balls and mash lightly with a fork (in picture above). Put on an ungreased baking sheet and bake for about 20 minutes at 300F.

Thank you for putting up a recipe for cheese wafers that doesn’t include Rice Krispies! These look great.
