I came up with this recipe after receiving some free sauce from a gentleman from “Country Bob’s”. I shared these biscuits with a group of friends to test them out, and they were gone in minutes, an absolute success. You can serve them as an appetizer, or make the larger size and eat as a meal.
Preheat your oven to 400 degrees.
In a large skillet, brown the meat over medium heat; drain off any excess fat.
Remove the pan from the heat and stir in barbeque sauce or “Country Bob’s All-Purpose Sauce” and the brown sugar.
Grease four 6-cup muffins pans or two 12-cup muffin pans. You will be making about 24 biscuits. Divide out the biscuits, using ¾ of each biscuit in each cup and stretching each into the muffin cups and up the sides, being sure to leave enough on the bottom to hold in the meat filling.
Divide the beef mixture among the cups, sprinkle each with cheese and bake until golden, about 10-12 minutes. Cool on a rack and serve hot.
If desired, top with sour cream, black olives, chives, shredded lettuce, salsa or any other topping you like.
This recipe can also be cut in half using a Texas size 6-cup muffin pan and half of the ingredients listed.
