These sweet potatoes are so delicious—crispy outside, soft and buttery inside—you’ll fall in love at first bite!
Preheat oven to 425 degrees. Cut the sweet potatoes in half lengthwise and then into thick wedges. Toss the sweet potato wedges in the olive oil. Sprinkle with kosher salt and fresh black pepper to taste. Spread evenly on a foil-lined baking sheet (for easy clean up) and place in the preheated oven for 15 minutes; flip and repeat until the exterior is crispy and dark golden and a knife pierces easily, about 35 minutes total, but watch carefully so they do not burn.
