Savory and sweet, this is the perfect Islander-esque side dish for rice and beans, fajitas, or jerked chicken! Serve with margaritas or mojitos.
1) Peel and slice plantains. Cook them in the olive oil in a cast iron skillet. Season with salt, cumin, and garlic powder.
2) Use remaining olive oil to cook the onion. Mash the onion and plantains together in a mixing bowl.
3) Add 1 cup corn, cooked
5) Add 2 cups flour, 1 tsp baking powder, and 1 egg (beaten). Mix well.
6) Drop spoonfuls of the batter into the oil and fry until fritters are golden brown on each side. Set on racks or paper towels to drain.
Enjoy with salsa, rice and beans, and mojitos!
