Crispy baked sweet potato fries with savory seasonings.
Preheat oven to 350F.
Peel and slice sweet potatoes into slices that are about 1/4 inch thick, then cut the slices into sticks about 1/4 inch wide.
Soak the cut potatoes in water for about 10 minutes and then drain them on paper towels.
Next, put them in a zip top bag, add olive oil, garlic powder, chili powder, paprika, kosher salt and corn starch. Shake well to coat.
Oil a cookie sheet and spread out the fries in a single layer. Bake at 350F for 15 minutes. Turn the fries with a spatula after 15 minutes are up. Turn the oven up to 450F and bake for another 10 minutes. Last turn the top broiler on for about 5 minutes to finish crisping the fries.
