Sliced roasted new potatoes with bell peppers and onions.
Preheat oven to 375 degrees. Toss sliced potatoes, peppers, and onions in olive oil. Place one layer in large greased (you can spray Pam) baking dish. Sprinkle with Greek seasoning*. Bake, stirring halfway to allow both sides to crisp.
*I occasionally season with ground red pepper and garlic salt for a different taste.
