Zucchini Frittata
Description
Zucchini, cheese and eggs, souffle(ish). This is easy, fast, and good.
Ingredients
- 4 cups Grated Zucchini
- 1 whole Grated Onion
- 1-½ cup Grated Cheddar Cheese
- ¼ cups Veg. Oil
- Salt And Pepper, To Taste
- 1-½ cup Bisquick
- 5 whole Eggs
Preparation
Grated the zucchini, onion and cheese; mix them together in a large bowl. Add all the remaining ingredients. Mix together and place in a 8×13 dish. Bake at 350 degrees for 60 minutes or until set and golden brown on top.
Variation: I have also made this with chopped ham added to it. It’s really good either way.
