		<description><![CDATA[This was great! The only reason it&#039;s not a full 5 stars is that a few things could have been more clear in the instructions. Otherwise, the taste was amazing and it was super easy and fast! YUM!! 

A few adaptations you could try (this recipe is very easy to adapt): 
Sundried Tomatoes
Fresh Spinach (added to pan)
Mixing more feta into everything before stuffing
Using the inside of one more eggplant to get even more eggplant goodness in the stuffing
Use real sausage (if you&#039;re not veg!)

Give this one a try! You will love it!]]></description>
