		<description><![CDATA[I made this dish for dinner tonight, but I didn&#039;t use tofu.
I used two boneless, skinless chicken breast halves.  It was very good, but I didn&#039;t cook the chicken all the way through in the skillet, because I thought it would be too dried out.
The next time I make it, I&#039;ll wait until I add the chicken to the curry/coconut sauce to cook for about 5 minutes and then at the last minute add the cilantro.  My sauce wasn&#039;t as bright as yours, because the cilantro cooked with my chicken.  It tasted delicious though.  It&#039;s an easy dish to prepare too!]]></description>
