		<description><![CDATA[We got some ridiculously hot poblanos, so this turned out way spicier than we anticipated. No worries, though. The polenta is genius! I am lactose intolerant, so the hard aged cheeses are the only ones I can get away with usually. That sauce is magic. Good stuff. :)]]></description>

I made a couple of changes...cut and sauteyd one yellow onion with two whole garlic cloves, split the mixture in half, removed the garlic cloves, and then used one-half for the polenta and the other half for the sauce.  I also forgot to make the sauce ahead of time and it was still good.  The flavor of the polenta is great and tastes so good with the poblano.  For a less healthy version, I think bacon would put this recipe over the top.]]></description>
