I took one bite, however, and forgot it all. The flavours are well balanced and perfectly blended. This is my new favorite lunch salad (although the family loved it for dinner too).

I still wonder if there’s a little too much oil. I think 1/4 cup would suffice. Otherwise, it’s a wonderful recipe, and I’m glad to have made it.
