I am a bit confused on the 3 lbs of eggplant and 6 cups of sauce because i don&#039;t think I used quite 1 and used 18 oz sauce, but it was delicious! I normally don&#039;t really like eggplant, but my husband loves eggplant parmesan so I made it for him but I ended up loving it as well. It didn&#039;t say, but I sprayed my baking sheet and my casserole dish with nonstick cooking spray.  I didn&#039;t have Italian bread crumbs so I used panko crumbs and added seasonings.  I also used thin slices of buffalo mozzarella instead of grated.  

After I added the top layer of eggplant slices I added a layer of sauce and then the final cheese.

This is a keeper and I will definitely make again!]]></description>
