I made them with Sunbutter because my son is allergic to peanuts and everyone in my family loves them! I also add a tablespoon each of flax seed and wheat germ (to increase the nutrition). I make a double batch, wrap them individually in Suran Wrap and freeze them. They have become one of our during and after-school snacks!

These look great, can't wait to try them. Keep in mind, however, if you are making these for someone with nut allergy that not all chocolate chips are "safe." In fact, most are not. We use Hershey's because they are great at labeling. But only the normal semi-sweet because some of the other varieties are made on the same equipment or in the same facility with nuts. Make sure you read the labels! :-)

Just made these bars and they are very tasty. I used creamy peanut butter (will try the sunbutter next time) and toasted the oats in a dry skillet. These will be a great healthy snack for son during track meets.
