		<description><![CDATA[So unbelievably delicious! Didn&#039;t even miss the meat although it would be easy to add if desired. Although we only used about a 1/4 a tsp of cayenne and it was pretty warm without being too hot. 3/4 a tsp would make this recipe unedibly hot in my opinion. The store was out of yellow squash, so I used all zucchini and they were also out of red bells so I used a yellow one. We served it with some corn bread on the side. This is definitely going in my rotation this summer for meatless dinner nights!]]></description>
