I also added a little cilantro at the end. It helped shorten the cooking time by cutting the eggplant a little smaller than suggested and by steaming it a bit during the cooking time (add a couple tablespoons of water and cover with lid). I definitely will make this again. My 15-year old daughter and husband loved it too!
