Description

Fall is almost here and it’s time to bring out the pumpkin! This Healthy Paleo Pumpkin Bread with tigernut and cassava flour pairs perfectly with a warm drink on a cool day.

Ingredients

  • 1 cup Cassava Flour
  • 1 cup Tigernut Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • ½ teaspoons Ground Ginger
  • ½ teaspoons Salt
  • ¼ teaspoons Allspice
  • ¼ teaspoons Nutmeg
  • 1 cup Pumpkin Puree
  • 2  Eggs
  • ⅓ cups Avocado Oil
  • ¼ cups Apple Sauce
  • ¼ cups Maple Syrup
  • ¼ cups Milk Of Choice
  • 1 teaspoon Vanilla
  • 3 Tablespoons Sprouted Pumpkin Seeds

Preparation

Preheat oven to 350ºF. Grease or line a 8×4 bread pan with parchment paper.

In a large bowl, combine cassava flour, tigernut flour, baking soda, cinnamon, ginger, salt, allspice, and nutmeg.

In another bowl, combine pumpkin puree, eggs, avocado oil, apple sauce, maple syrup, milk, and vanilla.

Pour wet ingredients into dry ingredients and stir. Pour into prepared bread pan. Sprinkle sprouted pumpkin seeds on top.

Bake at 350ºF for 60 minutes, or until a toothpick comes out clean in the middle. Let cool for 10 minutes before removing from pan and placing on cooling rack. Let cool completely before serving.
