Adapted from a favorite family fudge recipe, this sugar free version is very rich, soft and chocolaty. Just the way you want fudge to be! Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, coconut free, nut free if pecans omitted. CKD/Renal Diet friendly.
Butter a 4×6 pan. Cut a strip of parchment or waxed paper wide enough to cover bottom of pan, and long enough to hang over both sides. Set aside.
In a large pot, add sugar, crema and salt. Cook and stir over medium heat until it comes to a rolling boil. Boil for 8 minutes, stirring constantly to avoid sticking or burning.
Add half of the pecans and all of the remaining ingredients. Stir well, pour into buttered pan. Sprinkle remaining pecans over the top.
Cool on a wire rack, then put in refrigerator to finish setting up. When fully set, run knife along uncovered edges of pan, lift fudge carefully out of dish and onto a cutting board (or cut into pieces while still in the pan, and then lift out). Cut into 20 pieces: 4 slices on short side, 5 slices on long side. Store in refrigerator or freezer.
Yields 20 squares of about 1 inch each.
Notes:
• If you can’t find the Walden Farms Marshmallow Dip, omit it. The fudge will be a little grainier and perhaps not as creamy. Try increasing the crema to 4 ounces and add a little more sweetener. It should still set up.
• I don’t get any kickback for products I use in my recipes. Brand names are included only to assure more accurate nutritional estimates. Nutrition information is based on My Fitness Pal’s online recipe analyzer. The recipe is stored there and available to MFP users for logging in their food diaries. Sugar alcohols and liquid Sucralose are excluded from nutrition counts, as they are not absorbed by the body and rate zero on the glycemic index.
