I've been low carb for 15+ years and have tried every low carb bread recipe ever written (soy flour, wheat protein, lupin flour, parmesan, magic dough, etc. etc.) and this is the BEST one I have ever found! Light and fluffy with a huge rise and no falling. It's tender while having a good chew, just like wheat-based sandwich bread or buns. I made it into onion buns and wow!

So I made these as I am desperate for a good yeast bread. So here are my comments: AHHHHHHMAZING!!!!! I did not have Oat fiber..only Oat flour. So I used that. I did not have Psylium husks...so I opened a bunch of Metamucil fiber tabs I had as the ingredients said only Psyllium husks! I also had some gluten free Benefiber powder...so I made up a TBSP of al that! I did not feel like dealing with my mixer (!) so I tossed it all in my bread machine. DOUGH setting. Was worried dough was watery so I made in muffin cups. OMG!!!!! Delish!!! So I will work on getting the Oat Fiber and actual psyllium husks! Husband loved it. And heck...great way to get that fiber down! Thx for this!
