To cut down the calories a bit, we used a large head of cauliflower and halved the potatoes (and used red ones…so you had to cook longer b/c they’re tougher). I also used Tony Chachere’s Creole Seasoning instead. Very delish! Thanks!

I have a horrible head cold that doesn’t allow me to taste much and I have been craving soup. This hit the spot. It is nice and spicy and has lots of flavor. The spices don’t mask the corn flavor which is what I like. And it was so simple to make!! Let’s see how my husband likes it. He will be able to taste the full flavor.
