Description

This 10-minute dessert can be served immediately, or made ahead. Use any berry and extract combination you like with the same result. Kefir cheese adds lightness and creaminess to this mousse that cream cheese desserts lack, and kefir cheese is a great source of important probiotics. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, nut free. CKD/Renal diet friendly.

Ingredients

  • 4 ounces, weight Bel Gioioso Mascarpone
  • 4 ounces, weight Labne Kefir Cheese (See Notes)
  • ¼ cups Heavy Whipping Cream
  • 2 Tablespoons Unsweetened Milk Substitute (I Use Dream Blends Coconut Almond & Chia)
  • ¼ cups Swerve Confectioners (powdered Erythritol)
  • 1-½ teaspoon Strawberry Extract
  • 1 teaspoon Vanilla Extract
  • ½ cups Strawberries, Chopped Or Sliced

Preparation

Put all ingredients except the strawberries in a medium mixing bowl. Use a stand or hand mixer to slowly mix all ingredients until smooth. Add strawberries, and increase mixer speed to high and continue mixing about 1 minute, or until mixture becomes light and fluffy.

Transfer to a large serving/storage container, or divided into half-cup containers with lids. Refrigerate until ready to serve.

May be frozen. Defrost on counter for about 1/2 hour.

Notes:
• The same recipe can be used with any berry and extract combination you have on hand.
• If you don’t have kefir cheese, substitute sour cream.
• I get no kickback for products used in my recipes. Brand names are included to assure more accurate nutritional estimates. Nutrition information is based on My Fitness Pal’s online recipe analyzer. The recipe is stored there and available to MFP users for logging in their food diaries. Sugar alcohols and liquid Sucralose are excluded from nutrition counts, as they are not absorbed by the body and rate zero on the glycemic index.
