Description

I mix up a batch of this and freeze it in small containers. Use on low carb ice cream, mix into muffin batter for an apple muffin, top pancakes, etc. The nutritional information is for 2 tablespoons. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, dairy free, nut free, coconut free, Paleo, CKD, Low Potassium, Low Sodium, Renal Diet. Paleo if butter substituted.

Ingredients

  • 20 ounces, weight Lucky Leaf Lite Apple Pie Filling, Diced
  • 2 Tablespoons Butter
  • 1 Tablespoon Swerve Brown Or Other Brown Sugar Substitute
  • ¼ teaspoons Ground Cinnamon
  • ¼ teaspoons Ground Nutmeg
  • ¼ teaspoons Ground Cloves

Preparation

Pour pie filling into a medium size pan, and chop to a small dice. I use a strawberry chopper. You may use food processor if you want, but be careful or you’ll end up with apple sauce.

Add butter and all of the spices. Heat over medium heat until butter melts and sweetener dissolves.

Add to muffin recipes or yogurt, make mini apple tarts, use on pancakes or ice cream as a topping. Store in refrigerator or freezer in small containers, and defrost one when you need it.

Yields 2 cups of filling/topping, or 16 servings of 2 tablespoons each.

Notes:
• To use Lucky Leaf Lite as a pie filling, omit the chopping step, and add all of the ingredients listed. Otherwise it will be rather bland.
• Nutrition information is based on My Fitness Pal’s online recipe analyzer. Brand names are included only to assure more accurate estimates. The recipe is stored on and available to MFP users for logging in their food diaries. Sugar alcohols, Allulose, and liquid Sucralose are not absorbed by the body and rate zero on the glycemic index, so are excluded from nutrition counts.
