Description

Buttery, lemony chicken and noodle heaven in 20 minutes or less! Low carb, gluten free, very tasty, and totally satisfying. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, nut free, coconut free, low potassium, make-ahead, meal prep. (There is butter in the ready-made simmer sauce, so this cannot be made dairy free.)

Ingredients

  • 1 package (14.11 Oz. Size) Zeroodle Organic Shirataki With Oat Fiber (see Notes)
  • 16 ounces, fluid Gia Russa Lemon Artichoke Simmer Sauce (See Notes)
  • 1 pound Roasted Chicken Breast Without Skin, Cubed
  • 12 ounces, weight Trader Joe's Grilled Marinated Artichoke Halves
  • 2 Tablespoons Capers
  • 1 Tablespoon Butter
  • ½ teaspoons Coarse Ground Black Pepper
  • Garnish, Fresh Chopped Parsley

Preparation

Drain the noodles in a strainer. Rinse well, then shake to remove all excess water. Blot with paper towels to get off as much moisture as possible so your sauce does not get diluted. Set aside.

Cube the cooked chicken (I use grocery store rotisserie chicken for this dish). Drain the artichokes and cut into quarters, if not already cut.

Put all ingredients other than the parsley in a large skillet over medium heat. Stir every couple of minutes until heated through. This meal could also be put into a glass casserole, covered and heated in a microwave oven, stirring at least once during the heating time.

Divide into serving dishes. Garnish with fresh chopped parsley.

Freezing not recommended, if using Zeroodles.

Notes:
• You could use mushrooms or any other low carb vegetable in place of the artichokes, if you prefer. The artichokes are zero net carbs, so be sure to count carbs for any substitution you make.
• The Zeroodles can be ordered online at Netrition.com, Zeroodles.com, or store.bariatricpal.com. If you can’t get them, substitute any low carb noodle you like to use. The Zeroodle listed here is 28 calories, and 0 net carbs per serving. Add any carbs for your noodle replacement.
