This soup is delicious. I have even modified it to a vegetable rice soup when I don’t have shredded chicken/turkey on hand. Just sub in extra carrots and celery, and add corn and peas. It’s very filling and kids love it.

Just made this soup tonight. I have a ton of leftover turkey from Thanksgiving and sandwiches get boring. This recipe is WONDERFUL!! It's creamy, velvety, savory and so full of flavor! Perfect way to use up leftover turkey. I made 2 changes: I didn't have half and half on hand, but used 1 cup heavy cream instead. And similar to the other review, I added 1 tsp dried thyme, only I added it at the end of the recipe when I added the parsley. Worked very well. I will definitely make this again. Thank you so much for sharing!!

My family LOVES soup so I was anxious to try this one. I made this soup yesterday evening for dinner and can't say enough about the wonderful flavor and texture. It was so creamy and delicious! Who doesn't like half n half, right!? I only changed one thing by adding some finely minced fresh thyme to the saute of vegetables. I plan to add this one to my regular dinner menu!
