I’m in love with this soup. This is my 2nd comment on it I think – but I have a question. Does anyone have a solution to stop the tortellini from BLOWING UP and absorbing all the liquid? I have made up the “soup” and then just added the tortellini as I warmed up the soup – but I made a big batch of it last night and went ahead and added the tortellini.

The perfect quick, healthy, Meatless Monday dinner! I added some extra veggies that needed to be used and it was perfectly delicious and fullfilling.

I’ll make it again for sure, and probably change a couple things. DH didn’t like the tomatoes in it, chicken & mushrooms in it would probably be yummy too like pp said. My picky dd ate it, so that’s a plus.

Yum! I wasn’t sure if it would live up to all the awesome reviews since it’s so simple, but we loved it! We used Buitoni Sweet Italian Sausage tortellini. We had it with Focaccia with Caramelized Onions (by cookincanuck) and it was a great combo!

Since I first tried this soup it has become a weekly staple in our house. I’ve changed it up a little each time depending on what I’ve got, but it turns out tasty every time. Thanks for such an adaptable recipe.

Simple enough even for the most kitchen challenged. I will definitely make this soup again. Next time I will cook the tortellini separately (I found the broth a little starchy from the pasta I used) and use diced tomatoes. Thanks for sharing!
