I added extra tomato sauce and corn to make a bigger batch, and played with the spices a bit to get it more flavourful. Really liked some garlic powder and paprika in there and bumped up the cumin. I’m really enjoying it with some corn bread!

I made a double batch.
Added a little more chili powder and a little less chicken broth.
I couldn’t keep my husband out of it.

I was making it for tomorrow.
Since he was enjoying it so much — he kept “testing” it for me — I asked him if he’d like it for today.
He did.
He was a happy boy (grandpa).
