I added carrots, mushrooms, zucchini and some spicy turkey sausage. (Because of my additions I had to add more stock.) The base of this soup is delicious, the ginger and lemon really give it a nice flavor. Plus it was easy enough to do when I got off of work. Thanks for sharing!

I used plain tomatoes and smoked paprika and made due with orange zest instead of lemon. I am going to make this all the time. It was a nice alternative to my usual brown lentil soups.
